Thread the pieces of mango, pineapple, okra, kumquat and mild pepper onto a skewer. Add the breast slices.

Make a salad with the same ingredients, drizzle over the lemon juice, sprinkle on the grated coconut and add the small bunches of mint.

Cut a passion fruit in half: using a spoon, place some of the pulp around the skewer.
